You usually split time between the test kitchen and meetings. Morning: test 2–3 new recipes, weigh portions, record yield and tasting notes. Afternoon: meet procurement or production about ingredient availability and costs, then update standardized recipe cards for multiple locations.

End of day often means data entry—entering food-cost numbers into the costing spreadsheet or software (like Foodcost Genius, ChefTec, or Excel) and sending revised specs to locations. Days with launches include marketing meetings to approve photos and descriptions.

You use recipe management software (ChefTec, Apicbase, or a shared Excel/Google Sheet) plus printable recipe cards. Each recipe must list exact weights, measure units, prep steps, allergens, and cook times so cooks in every store get the same result.

You also keep a versioned folder or cloud system (Google Drive or the company’s CMS) and send updates to production and procurement teams so ingredient specs and portion sizes match what’s on the card.

You calculate cost per plate by adding ingredient costs for the standardized recipe, then divide by portion count. Track food cost percentage: cost per plate ÷ menu price. Companies aim for 25–35% depending on concept; write down the target your employer sets.

Portion control uses weights (grams or ounces) and photographic portion guides. You run yield tests (how much usable product you get after trim) and record it so purchasing and production teams order the right volumes.

AI can speed ideation: use it to suggest flavor combos, write menu descriptions, or generate batch recipe templates. But always test recipes in the kitchen; AI can suggest unsafe ingredient combos, wrong temperatures, or illegal allergen claims.

Use AI as a first draft, then validate with sensory tests, labelling by procurement, and food-safety checks. Never publish AI-only recipes without standardization, yield testing, and cost analysis by you or a food scientist.

You monitor trend reports (NPD, Datassential), competitor menus, and social media for popular flavors or formats. Then make a 4–12 week test plan: build prototypes, run sensory panels, and pilot the item in 1–2 locations.

Work with marketing to test positioning and with procurement to confirm ingredient availability and price. If a product passes pilot sales targets and cost checks, you scale the standardized recipe to production.

Learn recipe standardization (weighing, yield testing, making recipe cards), basic food costing (cost per plate, food-cost percentage), and real cooking/knife skills so your tests are consistent. Practice using at least one recipe management or costing tool (Excel, ChefTec, Apicbase).
