Open your scanned PDF document in Adobe Acrobat.
Go to the Tools menu and select Recognize Text.
In the Recognize Text dialog, choose Recognize Text in This File.
Set the language and other OCR settings as needed.

Click Recognize Text to start the OCR process.
To export as plain text, go to File > Export To > Text.
To export as an editable Word document, go to File > Export To > Microsoft Word.
Choose your save location and complete the export.

This runs in the Acrobat app - there is no separate API for this task.
Renderable text means the PDF already has real, selectable text, not just an image of text. OCR is designed to find text in images. If your invoice PDF already contains renderable text, Acrobat thinks there's no image text to recognize, so it stops the process. You only need OCR if your invoice is a picture, not if it's already a text-based PDF.
If your scanned invoice is blurry, the OCR might not work as well. The clearer the scan, the better Acrobat can recognize the text. For the best accuracy, it's recommended to scan documents at 300 dpi. A blurry scan makes it harder for the software to identify characters correctly.
