Open one of your PDFs in Adobe Acrobat Pro.

Go to the 'Tools' pane and select 'Redact'.

For consistent redaction across multiple PDFs, carefully match the area coordinates and dimensions in each file before applying redactions.

Redacting permanently removes the information, making it unrecoverable. Drawing a black box only covers the text; the text is still there underneath and can be copied. Always use the Redact tool for sensitive information to ensure it's truly gone.
Redaction is permanent. Once you save a redacted document, you cannot undo the changes. Working from a copy means you always keep the original unredacted file safe. This is important for record-keeping or if you make a mistake.
For many items like SSNs or account numbers, use the pattern-based auto-redaction feature. This finds and marks all matching patterns automatically. After it runs, have another person review a random sample of the redactions to ensure accuracy. This saves time and reduces errors.
